MUTTON RECIPE - MUTTON KARAHI / MUTTON KADAI


            Hi friends...Welcome to AYESHA'S KITCHEN.  No need of a special introduction to Karahi Gosht / Mutton kadai. Mutton karahi is a dish with mutton,  which is traditionally made in cast iron wok called kadai / karai / kadhai / cheena chatti. Karahi is a popular meal in Pakistan cuisine which is consumed with nan. And In Indian cuisine  this dish is Mutton kadai. 





INGREDIENTS

Mutton                               - 500 g
Onion                                 - 2 nos, sliced
Tomato                               - 1 , sliced
Tomato puree                     - half a cup ( boil 2 small tomatoes, then remove skin and then grind it to form tomato puree)
Ginger garlic paste             - 2 tbsp
Green chilies                       - 2 nos
Turmeric powder                 - half a tsp
Coriander powder               - 3 tbsp
Pepper powder                     - 1 tbsp
Garam masala powder        - half a tsp
Karahi masala powder        - 2 tbsp
Salt
Oil Coriander leaves


KARAHI MASALA POWDER

Cumin seeds                     -  1 tbsp
Pepper corns                    - 1 tbsp
Dried red chilli                 - 2 nos
Cardamom                        - 2 nos
Cloves                                - 2 nos
Cinnamon stick                  - 1
Turmeric powder                - half a tsp
Kasuri methi                       -  1 tbsp

Dry roast all these ingredients except turmeric powder and grind them to a fine powder in the smallest jar of the grinder.


PREPARATION

  • Marinate the cleaned mutton with turmeric powder, coriander powder and salt.  Add half a cup of water to it  and pressure cook it for 2 whistles. When done set aside the mutton and the stock separately.
  • Heat a wok ( kadai / karahi) with  1 tbsp of oil. Add tomato puree and  1 tbsp of karahi masala powder to it. Cook for few minutes and then add the stock water to it. Cook well till it becomes thick gravy or until the oil separates. Then transfer it to a bowl.
  • Now again  heat the same wok with 2 tbsp of oil and saute onions till golden. Then add chopped tomato and cook until it becomes tender. When done, add ginger garlic paste, green chilies. 1 tbsp of karahi masala powder, pepper powder and salt. Cook well for 3 minutes. 
  • Now add the cooked mutton to it along with the tomato pureed stock gravy.
  • Then give a fine stir and cook for another 15 minutes in a low flame or until the oil separates and floats on the top.
  • Garnish with coriander leaves.
  • Serve hot with tandoori roti and nan bread.
NOTE ..I DID'T USED CHILLY POWDER, INSTEAD USED PEPPER POWDER AND DRIED RED CHILI ONLY.  FOR HOT FLAVOR, YOU CAN USE 1 TBSP OF CHILI POWDER .

SALAD RECIPES - ROASTED BEET SALAD


Hi foodies...Welcome to AYESHA'S KITCHEN.  Roasted beetroot salad is a salad packed with nutrients and powerful anti oxidants. Beets are very low in fat and  of exceptional nutritional value. Beetroot roasted served with cucumber and green leafy vegetables is a best accompaniment with chicken. Roasting makes beets something crunchy into silky and tender. 



INGREDIENTS

Beets            - 1, large, peeled and cut into cubes
Cucumber    - 1, cubed
Olive oil       - 1 tbsp
Pepper powder- 1 tsp
Vinegar            - 1 tsp
Salt
for garnishing
Carrot 
Lettuce
Red apples (optional)
Oranges

PREPARATION

  • Add olive oil and salt to beets and  you can toss it in oven until tender or you can do it on stove top for 5 - 8 minutes in a low flame.
  • Now mix the roasted beet with pepper powder, vinegar and then add chopped cucumber, red apples.
  • Garnish with lettuce, carrot slices, orange slices or some green veggies that make more colorful.

SALAD RECIPES - CAPSICUM CUCUMBER SALAD - HEALTHY DIET SALAD


      Welcome to AYESHA'S KITCHEN. How about a salad  which is very quick and easy, rich source of vitamin C, high in antioxidants and great for skin hair and nails....So here is the recipe of a very healthy diet salad . The Capsicum is great for salads as it helps to cure many diseases mainly high blood pressure, reducing cholesterol and preventing cancer. 







INGREDIENTS
Green capsicum        - 1, thinly sliced length wise or bite size pieces
Cucumber                - 1, sliced length wise                
Carrot                      - 1, slice length wise
Salad tomato           - 1
Sweet corn               - few
Lemon juice             - 1 tsp
Pepper powder        - a pinch
Chaat masala (optional) - half tsp
Salt

PREPARATION


  • Take all vegetables in same quantities(more or less, all veggies should be of same quantity).
  • Slice lengthwise or bite sized pieces.
  • Then add pepper powder, chaat masala, lemon juice, salt and mix well. Chill for few minutes. And can garnish with dill, mint leaves, cucumber slices. Check the image for detailed garnishing.




SALAD RECIPES - DEVILED EGG SALAD


Hi foodies..Welcome to AYESHA'S KITCHEN. Here is a wonderful egg salad recipe for making parties something special. A salad with deviled eggs, which is also known as stuffed egg salad, angel eggs, dressed eggs and so on. Here the hard boiled eggs are sliced in halves and filled it with egg yolks mixed with other ingredients. Deviled eggs are usually served as a side dish, appetizer, or a main course. Commonly used for enlightening parties. So lets go through the recipe. Here it is... Do try and drop your feedback...!!!!!


INGREDIENTS

Hard boiled eggs                       - 6 nos ( can take more or less , adjust the filling accordingly )
Cream cheese                             - 3 tbsp
Mayonnaise                               - 4 tbsp
Yellow mustard                            - 1 tsp (adds flavor to salad)
Pepper powder                             
Paprika
Vegetables of your choice         - for salad garnish


PREPARATION


  • Cut the hard boiled eggs length wise in half.
  • Take the egg yolks out and mash it in a bowl with a fork.
  • Add cream cheese, mayonnaise, yellow mustard, pepper powder, paprika . Mix well with the yolks.
  • Then fill  or pipe the egg whites with the yolk mixture.
  • Garnish with small piece of  celery, dill leaves and bunches of vegetables.

INGREDIENTS

Cabbage                                  - 1.5 cups, very finely grated
Carrot                                      - half a cup, very finely grated
Mayonnaise                              - 5 tbsp
Salt                                           - a pinch
Sugar                                        - 3 tbsp ( can add more accordingly)
Milk                                          - 3 tbsp
Vinegar                                     - 1.5 tbsp
Butter milk  or curd                   -  3 tbsp ( less sour ), curd / yogurt  is more preferred 


PREPARATION


  • Mix together all the ingredients in a bowl except cabbage and carrot.
  • Blend well with a spoon or whisk well until well combined.
  • Add the grated cabbage and carrot to this creamy mixture.
  • Mix gently until well combined. Do not make the coleslaw watery. So add the prepared coleslaw dressing accordingly.
  • Refrigerate for 2 hours. Do not freeze. 
  • Serve chill. Enjoy.
