.                Kerala beef fry and beef ularthiyathu is very famous for its taste and spiciness. Parotta with beef curry is a very popular Kerala recipes, which always reminds me of a drooling taste. If you are not into spicy hot food, don't stay away from these spicy finger licking good dishes. You can adjust the heat to suit your taste, as i do. For me, beef roast or beef fry must be spicy (i mean the heat which i can tolerate) to enjoy the real taste.  So for those spicy treat lovers, here is your treat and adjust your spice level to suit your taste.

So lets move on to the recipe. This recipe for beef is simply delicious as it looks. Here beef pieces, onion and tomato is pressure cooked along with turmeric powder and fenugreek seed until half done. And is added to the sauteed gravy of onion and ground paste along with tomato sauce which makes this roast spicy with sweet taste. No compromise in slow cooking. You must cook it in a medium flame until each piece of beef is well coated with this yummy masala. INGREDIENTS

Beef                                           - 500 g, bite size pieces
Tomato                                       - 1, medium sized, roughly chopped
Shallots                                      - 8 nos, (i used a roughly chopped onion only) 
Fenugreek seed                           - half a tsp (i used some fenu greek powder too)
Turmeric powder                          - half a tsp
Salt

To saute

Onion                                             - 1, big, sliced
Dried red chillies                           - 4 nos
Tomato sauce                                 - 2 tbsp
Oil
Curry leaves

To grind

Garlic cloves                            - 8 nos
Ginger                                       - a small piece
Fennel seed                               - 1 tsp
Cardamom, cloves, cinnamon - 2 piece each
Cumin seed                              - half a tsp
Kashmir chili powder               - 1 tbsp (can add more for more hot)
Pepper powder                          - half a tsp
Turmeric powder                       - half a tsp
Coriander powder                      - 2 tbsp


PREPARATION
















  • Add the beef pieces into a pressure cooker along with shallots, chopped tomato, fenugreek seed, turmeric powder and salt. Combine it well. Add half a cup of water. Let it cook until half done or for 2 whistles.
  • Meanwhile, combine all ingredients to grind and blend it well to form a paste. Set aside.
  • Heat a fry pan with some oil (preferably coconut oil). Add curry leaves and then add dried red chilies. To this, add onion and saute until golden. When done, add the grinded paste along with tomato sauce. Combine well and let it cook for few minutes.
  • Now add the cooked beef and the stock water.( If you have more stock water, then add the stock water first to this sauteed mixture. Let it cook until it thickens and then add the beef pieces).
  • Saute on a medium flame until it is almost dry. Slow cooked beef tastes special always. Each beef pieces must be coated with the spicy masala. 
  • Serve hot with rice, appam, steam cake and like so. 
NOTE: For spice lovers...you can add more chili powder to make this roast more delicious.

CHOCOLATE CUP CAKE - EGGLESS CUPCAKE RECIPE

Chocolate cupcakes paired with chocolate frosting is the perfect baked desserts for a party especially for kids birthday party. Chocolate cup cake paired with chocolate frosting is a perfect combo made in heaven for chocolate lovers. Chocolate flavored birthday cake and cupcakes is my favorite of all. So here it is..a  classic chocolate cupcake recipe with out egg .Making egg free cupcake recipe is not a big issue, i bet. I prefer using eggs in my cake recipes,  but most of my visitors prefer eggless cakes recipes and so here, it is for you guys . This cupcakes turned out super moist and delicious even without eggs.  I wonder, why do we add eggs in cakes? Once you try this egg less cupcake,  you will make this chocolate treat over and over again for sure. I made a mini heart shaped egg less cake following the same recipe. INGREDIENTS

Sweetened condensed milk         - 1 cup
Unsalted Butter                            - 60 g or 3/4 of a cup
All purpose flour                          - 1.5 cups
Cocoa powder                              - 4 tbsp
Baking soda                                  - half tsp
Baking powder                              - 1 tsp
Salt                                                 - quarter tsp
Vinegar                                           - 1 tsp
Vanilla essence                               - half tsp or 1 tsp
Warm milk                           - half a cup (can add more if required)

FOR  FROSTING

Nutella and whipped cream                 - as required
Cherry (optional)  for topping             


PREPARATION

















  • Preheat the oven for 5 minutes at 180 degree C. 
  • Set aside the baking cups ready.
  • Sieve together the All purpose flour, cocoa powder, salt, baking soda and baking powder. Set aside.
  • Add in condensed milk and butter in a large bowl. Make sure that the butter is at room temperature.
  • Beat them well in  the same direction until it turns smooth and airy.
  • Fold the sieved flour to this and gently mix without disturbing the air bubbles.
  • Add in vinegar, vanilla essence . Then add, warm milk little by little and mix gently until smooth dropping consistency. Add more milk if the batter is more thick. But do not add more. 
  • Fill in the paper cups until half the cups. You can make 10 cupcakes with this batter.
  • Bake at 180 degree C for about 20 - 25 minutes. Check after 15 minutes with a tooth pick. If it comes out clean, then it is done.
  • Let it cool completely and then pipe it with your favorite frosting.
  • Here i used whipped cream and nutella for frosting. For that, take the whipped cream in a bowl and mix it with nutella. Whip it well. Now take a disposable piping bag with nozzle and  dollop the cream in along with some nutella . Make your own designs. Top it with cherry.

Squid / Calamari/ kanava is a very tasty and popular food which is prepared in different ways and recipes around the world. Fried squid / fried calamari is the most common recipe. I think this is my fifth recipe with squid. This spicy fried calamari recipe is a typical Kerala cuisine and is named as spicy koonthal masala fry / Kerala squid fry.  I love to follow the traditional recipe with squid, as those squid dishes give me a nostalgic taste always. Stuffed squid / stuffed calamari was my favorite snack along with a hot black tea when I was at my home. My mom is an expert in making stuffed squid as she often prepares this squid recipe whenever it is available. This calamari recipe tastes heavenly delicious too. 

 Squid is a staple in seafood restaurants. It is served as a starter or street food, side dish and snack. This recipe for squid is quite simple and humble. You can make this tasty chewy Indian fish recipe within minutes. As this recipe calls for simple ingredients in our pantry, I prefer this recipe more often. INGREDIENTS

Squid / Calamari / koonthal       - 250 g, cleaned and cut into cubes
Turmeric powder                        - half tsp
Kashmir chili powder                 - 1 tsp
Garlic cloves                               - 5 nos
Fennel seeds                                - half tsp
Lemon juice                                 - 2 tbsp
Salt
Curry leaves
Oil

PREPARATION










  • Clean the squid and cut it into cubes. Drain it and set aside.
  • Make a paste of garlic cloves, turmeric powder, Kashmiri chili powder, fennel seeds, lemon juice and salt. Make a fine paste.
  • Marinate the squid cubes with this marinade and set aside for half an hour. 
  • Heat oil in a pan (about 2 tbsp). Add this marinated squid along with some curry leaves. Fry until golden brown on both sides over a medium flame. (Do not cook over a high flame as it will leave the squid uncooked) . 
  • Fry in batches.

Here am with a quick breakfast idea or dinner idea,  one of the great way to incorporate vegetables into your dish. How about a healthy vegetable spaghetti noodles recipe to enjoy with your family on busy weekends? This whole wheat pasta recipe really works as it will entertain your noodle addicted kids. This noodle recipe with wheat spaghetti and spiral shaped vegetables is healthy, flavorful and comfort food. Here i used spaghetti instead of noodles packets. You can add your favorite vegetables but must be little attractive to impress your kids. So i made some spiral shaped carrots instead or thin julienne. You can make spiral carrots with a knife , just check the pic below. I served this simple vegetable noodles as it own but you  can serve it with chili gobi or veg manchurian. Spaghetti noodles      - 250 g
Garlic paste              - 1 tsp
Carrot                      - 1 carrot, julienne
Cabbage                  - half a cup, julienne
Bell pepper              - as required, thinly sliced
Egg                          - 1, whisk with salt and pepper
Pepper powder        - half tsp
Soy sauce                 - 1 tbsp
Tomato sauce           - 2 tsp
Butter                       - 2 tbsp, melted
Salt

  • Cook the spaghetti... For that, heat enough water in a wide bottomed vessel. Once boiled, add salt and then add the spaghetti. Do not break it. 
  • Cook for 5 - 8 minutes or as per the package description.
  • Once done, drain it into a colander. Add a teaspoon of oil and combine well. Set it aside.
  • Combine together tomato sauce and soy sauce in a bowl. Pour it over the cooked spaghetti and mix them well. Again set aside.
  • Making of vegetable noodles... 
  •  Heat a pan with oil and scramble the whisked egg. Set aside in a bowl.
  • In the same pan, heat butter and saute garlic paste for a while. Do not burn it. To this add carrot julienne (you can use julienne peeler for this or here is a tip to make carrot julienne with knife . check the 5th and 6th pic), cabbage sliced or julienne, bell pepper thinly sliced. 
  • Add pepper powder and salt. Combine well.
  • Now add the cooked spaghetti and toss well for two minutes. Check for salt.
  • Add the scrambled egg and combine. Garnish with any vegetable julienne.
  • Serve hot.
