INSTANT PUDDING RECIPE / SAGO PUDDING

Having desserts after the main course meal is something inevitable for most of us. It is very difficult to make some desserts or puddings every day. Sometimes we crave for something sweet but no time to make the same. Am not a sweet tooth guy but I do love to have some sweets after my main course meal and often after my dinner meal. This Instant pudding recipe or Instant dessert recipe is dedicated to all those who crave for sweets in a hurry. Yes, this pudding is incredibly comforting. Yup this pudding recipe is a great twist to usual pudding recipes. You don't need Chinagrass, gelatin, cornflour or custard powder for setting this pudding. The sweet coconut powder which is used for garnishing this dessert tastes amazingly delicious. Desserts don't get easier or quicker than this yummy sago pudding.. Am sure this will be a great refreshing treat for everyone.

INGREDIENTS

For cooking Sago 

Sago pearls / sabudhana   - half a cup
Ghee - half tsp
Sugar  - 1 tbsp
Salt  - quarter tsp
Hot water - 1.5 cups

For making sweet coconut powder 

Scraped coconut  - 1 cup
Sugar  - 2 tbsp or more

Other Ingredients

Thick coconut milk   - half a cup
Sweetened condensed milk - quarter a cup or more

PREPARATION

  • Let's prepare sweet coconut powder and sago ahead of time and store it in the refrigerator in an airtight container. So that you an make instant pudding within minutes. Its shelf life is more than a week when refrigerated.
  • Making of sweet coconut powder - Heat a pan and add the scraped coconut  and sugar. Dry roast it over a medium-low flame until slightly golden and crisp. It will take around 10 minutes. When done let it cool slightly and pulse it in the grinder. Store this sweet coconut powder in an airtight container and can use it for decorating any desserts or puddings .
  • Cooking sago - Heat a pan. Melt the ghee and roast the sago pearls for 2 minutes over medium-low flame. To this add 15 cups of hot water along with sugar and salt. Cook until sago is thoroughly cooked. When done transfer it to a bowl and store it in an airtight container for making instant pudding with it.
  • Let's prepare the Instant pudding - Mix together thick coconut milk and condensed milk. This mixture must be slightly thick. Mash the cooked sago along with some water or coconut milk. Add it to half a cup of boiling water. Combine it very well for 2 minutes without any lumps. Now take a pudding tray. Here a going to serve this pudding in glasses.   So add this cooked sago in each glasses until it covers half of the glasses. Level it well using a spoon. Top it with some coconut milk mixture. Garnish with sweet coconut powder.
  • So our Instant  pudding is ready to serve.

LABOTTA - EASY BREAKFAST RECIPE / KIDS SNACK RECIPE

EASY BREAKFAST FOR KIDS/LABOTTA

We all know that Breakfast is one of the most important meals of the day. But due to lack of time, many of us skip having breakfast. Here am with an easy and yummy dish to serve for breakfast. This mildly sweet dish is also best to serve as an evening snack as well. Labotta -  the name itself is interesting right?  The dough of labotta is almost similar to the dough of poratta (Indian bread). Poratta is considered as one of the favorites and popular dish of Keralites. The dough for labotta is prepared using ripe plantain and All purpose flour or maida.  But for a healthy version, you can use wheat flour instead of maida.  I paired this easy and simple dish along with thick coconut milk and sugar mixture. It tastes amazingly good even with a nice cup of tea and so it doesn't require any side dish. The addition of ripe plantain makes this dish tastier and more special. Moreover, this breakfast recipe is kids friendly and they would surely love to pack this mildly sweet dish in their snack box. Do substitute maida or All purpose flour with wheat flour and make a simple and healthy breakfast for your family.

INGREDIENTS

All purpose flour / maida - 1.5 cups
Ripe plantain - 1, boiled and make a smooth paste along with sugar
Egg   - 1
Black Sesame seed   - 1 tsp
Salt  - half tsp

PREPARATION

  • Boil the plantain or banana very well and ground it along with sugar. Do not add more sugar. Set aside ready.
  • In a large bowl, combine together maida, sesame seeds, and salt. Cobine well with hand or spoon.
  • To this, add egg and combine again.
  • Then add the thick banana paste and mix very well. Apply some ghee on your palm and knead it to a smooth dough. 
  • When done keep, covered for half an hour.
  • Then heat a pan over medium flame. Grease the pan with ghee. Make medium sized balls out of this dough and flatten each ball using the pathiri presser or chapati presser. Add it to the hot pan. Cook until both sides are done. You must spread ghee over the labotta before flipping.
  • When done transfer it to a plate and set aside covered. 
  • Serve this along with thick coconut milk and condensed milk mixture or thick coconut milk and sugar mixture.
