VARIETY PUDDING / BALLOON PUDDING

Puddings , my favorite dessert recipe. I love experiments in pudding recipes than baking cakes and pastries. You can check previous videos for a variety of pudding recipes. I always need some variety in puddings or even in desserts or sweets. This time am with an exiting milk pudding recipe. I inspired this pudding recipe from a Japanese food video where the pudding is filled in a tiny balloon along with a pack of  caramel . Burst the balloon using a toohpick, drip the caramel which is provided along with the balloon pudding over this milk pudding and enjoy . Is it safe to set an edible pudding inside a balloon?..sorry to say...am not sure about that. But the tastes was awesome and is really a kind of entertainment for kids to bursting the balloon and having the dessert. You can also set this pudding inside egg shells which is thoroughly washed. Egg pudding without using egg. Right?.you can make Easter egg sweet or dessert  using this method or enjoy your Christmas which is almost around the corner with this yummy creamy Christmas pudding. Moreover this pudding will be a great hit for birthday parties especially for kids birthday.

INGREDIENTS

For the pudding mixture 
Milk - 1 cup
China grass - 3 gms 
Condensed milk - 2 tbsp or more 
Sugar - 2 tsp or more 
Caramel water - for topping this pudding 

PREPARATION

  • For making tbis balloon pudding, u need water balloon and a squeeze bottle.
  • Wash the water balloon thoroughly using this squeeze bottle. 
  • Let's prepare the milk pudding mixture.
  • Heat milk in a sauce pan. 
  • Meanwhile, melt the China grass in another pan along with quarter a cup of water. Cook until the chinagrass melts to clear liquid.
  • Once the milk starts boiling, add sugar and condensed milk. Mix very well. You can add more condensed milk as per your sweet preference.
  • Once the chinagrass melts to clear liquid, pour it to the milk mixture through a strainer. Mix until well combined. Cook for a minute. Remove from flame 
  • Transfer this mixture to another bowl and allow it to cool slightly. 
  • Once the milk mixture cool slightly, pour the milk mixture into the squeeze bottle.
  • And fill the water balloon with this milk mixture using  the squeeze bottle. 
  • Tie the balloon tightly . I made small balloon pudding only. Do not tie the balloons very tightly. 
  • You can also set this milk mixture in a silicon mold.
  • Keep it in the refrigerator for 4 hours.
  • Meanwhile you can prepare the caramel water by caramelizing the sugar and then add water to the caramel. 
  • So once the pudding is done, prick the balloon using a tooth pick. Remove the balloon and drizzle the caramel water over it. Serve and enjoy.
  • Yummy variety pudding is ready.

I have shared many snacks recipes on my blog. Satisfying our sweet tooth especially after lunch is not an easy task. Yeah..we all prefer quick and easy snack to make for our family especially to serve along with evening tea. Pazham vilayichath or banana coconut snack is as yummy as it sounds. This easy sweet snack is filled with the ingredients which are tasty and healthy. This plantain snack is perfect to savor along with the evening tea. Banana snacks like banana fritters(pazham pori), stuffed banana(pazham nirachath), toasted banana (pazham vazhattiyath), steamed banana are all-time favorite snacks recipes, especially in Malabar region. Evening snacks or festive snacks are very important and popular in the Malabar region. This sweet plantain snack(pazham vilayichathu) is filled the crunchiness of dry nuts, crispiness of rice flakes and melt in mouth roasted plantain. It is very easy to make this snack at home, as the ingredients are already available in our pantry. Moreover, you can impress your guest with this sweet simple snack and can see your guests gorging over till the last piece. So here is the recipe for easy snack recipe using plantain or pazham vilayichath (banana coconut sweet snack)

INGREDIENTS

Banana (ripe plantain)   - 1, big, chopped
Brown sugar or granulated sugar  - 4 tsp or as required
Scraped coconut - half a cup or more
Rice flakes - 3 tbsp
Cashews  - few or as required
Raisins  - few or as required
Cardamom - 2 nos
Ghee - 1 tsp + 1 tsp , softened

PREPARATION

  • Heat a pan with 1 tsp of ghee. Add the chopped plantain and sugar to it. Saute until the plantain turns slightly golden and done. When done, transfer it to a plate and set them aside. 
  • Now to the same pan, add 1 tsp of ghee. Add cardamom, cashews, and raisins. Saute them until golden and then add the rice flakes. Fry them until crisp. Finally, add the scraped coconut. Saute for a minute. You can add sugar if required. 
  • Add the prepared sauteed plantain and mix all together until well combined. 
  • Serve hot.
