  • Preheat oven to 180 degree C.
  • Grease the baking pan and line it with butter paper. Set aside.
  • Sift together All purpose flour (maida), cocoa powder, baking powder, baking soda, and salt. Set aside in a bowl.
  • Heat a nonstick pan over a low flame. Slide unsalted butter. Once melted, add the powdered sugar. Mix well to combine. Once the butter and sugar are well combined  (will take 5 to 8 minutes over a low flame).  Then remove from the flame. Now add the cooking chocolate and combine well until the chocolate completely melts.
  • In another bowl add mashed banana, egg and vanilla essence. Whisk well with a hand whisker (or can use wire whisker). To this, add the chocolate mixture. Again whisk well to combine.
  • Now add the flour mixture little by little and fold it gently (do not add the flour mixture at a time, for best result fold it in three batches.)
  • Pour this batter into the prepared pan.
  • Sprinkle almond flakes on the top.
  • Bake in the preheated oven for about 40 minutes or until the cake is done. (insert a toothpick and if it comes out clean, then the cake is done.)
  • Once done, remove from oven and let it cool completely at room temperature.
  • Then slice and serve.
