RAFFAELLO ALMOND CANDY / COCONUT LADOO WITH CONDENSED MILK

COCONUT LADDOO RECIPE

Desiccated coconut sweets are very easy and quick to make. This sweet recipe only needs handy ingredients in our pantry. You can also check my Coconut burfi and coconut pudding recipe for more related recipes. Coconut ladoo is often made for festive occasions. You can make coconut ladoo with khoya, coconut ladoo with sugar syrup and desiccated coconut and much more variations. Here am going to share the coconut ladoo recipe with condensed milk and desiccated coconut. These snowballs is a lovely treat to attract a crowd during any occasions like Christmas, Eid, Diwali, Holi or even wedding parties and birthday parties.

INGREDIENTS

Desiccated coconut (available in markets) - 1 cup + half cup for  garnishing
Condensed milk   - half tin ( or according to your sweet preference)
Cashews or Almonds             



PREPARATION

  • Take the desiccated coconut in a bowl and mix it with the condensed milk ( be careful while mixing that we need a dough, not a cream).
  • Mix well and keep refrigerated for 1 hour.
  • This process is to soak desiccated coconut well in the condensed milk or milkmaid.
  • Now make small balls with this soaked desiccated coconut placing a cashew or badam inside it.
  • Then roll it in desiccated coconut, which is kept for garnishing.
  • Again refrigerate for half an hour for better taste.
  • Raffaello candy is ready.

MAKING DESICCATED COCONUT AT HOME 
  • Take the finely grated coconut and spread it evenly on a baking sheet.
  • Place it in the oven and bake over low heat for about 5 - 10 minutes only.
  • This removes the moisture content in the grated coconut.
  • Duration depends on the size and moisture content of the coconut. so check the status of the grated coconut in the oven frequently.
  • When it becomes brittle, remove from the oven.
