Gram flour / kadalamavu   - half a cup
Chili powder                       - 1 tbsp ( can add more or less)
Rice flour                            -  2 tbsp
Dried red chili powder       - 1
Garlic                                 - 3 cloves, finely chopped
Celery                                 - 1 tsp chopped
Tomato sauce                     - 2 tbsp
Soy sauce                            - 1 tsp
Cornflour                            - 1 tsp mixed in some water
Salt
Coriander leaves
Oil

PREPARATION

  • Mix together the gram flour, rice flour  and salt in a bowl.
  • Now add some water and make a thick batter without any lumps. Do not add more water. The consistency must be very thick.
  • Heat oil in a deep bottomed vessel.
  • When hot, dip each thinly sliced potato in this gram flour batter and put into the hot oil.
  • Fry both sides in a medium flame.
  • Drain the excess oil using tissue paper. Set aside.
  • Now we have to prepare the sauce gravy. Heat a wok with 1 tbsp oil and add dried red chili. Saute for a while, add chopped garlic and celery. Toss well.
  • Now add tomato sauce, soy sauce and cornflour mixed in water along with some salt.
  • When it starts to boil add the fried potato slices and mix well.
  • Cook for few minutes and garnish with coriander leaves.
  • If you want more gravy you can add sauces and cornflour mixed water accordingly. As it is stir fried version this will be of less gravy.
