 Again am back with a perfect stove top cake recipe. Mangoes are the versatile king of fruits. We love both raw mango and ripe mango dishes to the core. When it is mango season, people try variety of scrumptious dishes with mango. Adding ripe mangoes in any delicacies gives a fine texture and flavor to those dishes.  This time am with an eggless cake recipe with ripe mango. Oven is not at all needed for baking a delicious cake. Here is a simple stove top cake baking technique which gives the perfect super moist cake ever. Trust me, this eggless mango semolina cake is also baked without using an oven (no oven cake recipe). When i saw this recipe while searching for ripe mango recipes, i couldn't wait to make this cake. I was waiting for the next purchase to buy some Alphonso mangoes. Unfortunately i got Badami mangoes only. Still this cake tastes super yummy with the intense mango flavor. This cake looks very tempting and is very simple and moist. In simply, it tastes more close to mango Kesari but with no mess. Just one bowl is required to whip everything. No egg, no all-purpose flour or no flour recipe. So lets see how to make this delicious egg-less mango semolina cake without using an oven. INGREDIENTS

Fine semolina / fine rava        - 1 cup 
Sugar                                       - half a cup (as per the sweetness of mango)
Mango pulp                             - 1 cup (thick)
Cardamom powder                  - half tsp
Baking powder                         - 1 tsp, leveled
Oil                                             - quarter a cup
Chopped nuts                            - for topping, optional

  • Grease the pan, dust with flour, tap out the excess and set aside ready.
  • Alphonso mangoes are good for this mango cake recipe (gives nice flavor). The sugar required for this cake depends on the sweetness of mangoes. I used less sugar than required as I prefer less sweet cakes. Blend a big mango chopped in a blender and puree it without adding water. Set aside.
  • The semolina / rava is ground to fine semolina (not powdered) for this recipe.
  • You can use your favorite nuts for topping. I used blanched almonds, sliced pistachios, and almonds for topping this mango cake.
  • HOW TO MAKE MANGO SEMOLINA CAKE - In a bowl, add fine semolina, sugar (powdered sugar is best), baking powder and cardamom powder (i used cardamom seeds as I don't have powder). Mix well.
  • Add oil and mix well.
  • Then add mango pulp and again mix well.
  • Let it set aside for 15 minutes.
  • After 15 minutes, pour this mixture into the greased pan. Top it with nuts. 
  • Here am baking this cake stove top. You can also bake this cake in a preheated oven at 180 degree C for 30 minutes or until a tooth pick inserted comes out clean.
  • STOVE TOP BAKING - Heat a non-stick vessel and once hot make the flame to medium-low (not in the lowest flame). Place the cake pan with batter inside it and close it with a lid. If any opening over the lid, close it with flour dough (maida dough). Check after 20 minutes and if the tooth pick inserted comes out clean, then the cake is done or cook until a tooth pick inserted comes out clean. 
  • Allow it to cool completely and then slice. It tastes best, only once cooled.
