SEMOLINA MILK KESARI / RAWA KESARI

Rava kesari or semolina kesari is one of the simplest south Indian sweet recipe. In Malabar / Kerala we usually make it during special occasions like ifthar, marriage functions, and so on. Moreover, it is an unavoidable evening snack in Kerala...Here am sharing my own simple version of TASTY SWEET RAWA KESARI... Do enjoy!!!!!

SEMOLINA MILK KESARI / RAWA KESARI


INGREDIENTS

Rawa / Semolina                               - half a cup
Sugar                                                 - 4 tbsp ( add according to your taste)
Milk                                                    - half a cup
Hot water                                           - 1 cup ( actually for half a cup rawa, 1 1/2 cups of hot water is required . But as I used a half cup of milk, only 1 cup of hot water is needed.)
Cardamom powder                             - a pinch
Orange food color/carrot pureed     - a pinch ( it is only optional, but I prefer half cup carrot grated and made a thick paste without adding water instead of using color)
Ghee                                                     - 4 tbsp
Cashews / Almonds / Dates                  - chopped, as required

PREPARATION
  • Grease a plate or mold with ghee all over the plate/mould and keep it ready.
  • Heat a pan and dry roast the rawa / semolina in a medium flame for 2 - 3 minutes. Keep it aside.
  • In the same pan add some ghee and roast the chopped nuts and keep it aside.
  • Now again spread some ghee in the pan and add the pureed carrot to it ( if you are using orange color, add it only once the  water boils.)
  • Mix well the carrot paste and then add 1 cup of hot water and a half cup of milk to it.
  • Mix well and when it boils, simmer the flame completely and add rawa slowly with one hand and stir it simultaneously with the other hand.
  • Stir continuously till rawa absorbs the water. Now add sugar and cardamom powder. Mix well.
  • Add 1 tsp ghee and again mix well till the rawa is cooked well. ( If required add some hot water, add only if the rawa is not well cooked).
  • When it starts to leave the sides of the pan, add chopped nuts, mix well and switch off the flame.
  • With the help of a spoon transfer it to the greased mold or plate immediately.
  • Spread it evenly on the greased plate with the help of a spoon.
  • Decorate with cashews or sliced dates.
  • Once cooled, cut into desired shapes.
