COOKING COMPETITION RECIPES

Hi foodies. Welcome back to Ayesha's kitchen, the taste of Malabar. These days I was little busy with my family and guests. My guests knew that am a food blogger and a Youtuber too. So they always expect some outstanding dishes and desserts from me. Every weekend I prepare some desserts as I know that I have guests the next day.  So I prepare puddings or related desserts on those days as my daughter and my husband never finish such sweet treats.  I don't have a serious sweet tooth but I crave for a sugary sweet or some desserts after my lunch meal and dinner meal even am completely full.  My little kid always craves for cakes only. She is the big sweet tooth baby in our home. 
A few months back, I had participated in a cooking competition. A fireless cooking competition conducted by Habitat school, um al Quwain. My kids are studying in that school and I was forced by my friends to participate in that competition. The contest was on October 16, 2018, as a part of the World food day celebration. It was for Kinder garden parents and kids only. All those fireless recipes were very innovative with an eye-catching presentation. As the competition was based on no-cook no fire recipes only, the recipes proved that even without fire one can make smackingly delicious dishes within no time. Vegetable salads, chat recipes, biscuit rolls, bread recipes and bread sandwiches, lollipops, fruit salads, cocktails and juices etc were some of those no fireless recipes. I made five recipes in one hour. Cashew coconut cake, coconut laddu which I named as snowballs same like Raffaello candy, Marzipan with powdered cashew, mortadella rollups and royal fruit salad using fruits and nuts. And I won the contest. Yes, I participated in a food competition for the first time and got the first position too. My little (big) joys of life. This fireless sandwich is pretty interesting to make and kids will love that sandwich for sure. You can even pack this bread rolls in their snack box too. INSTANT WELCOME DRINK / INSTANT DRINK USING MILKPOWDER

INSTANT PARTY DRINK 

Here is an extremely easy drink using milk powder to serve your guests. Instead of fresh juices or crazy sweet drinks, I prefer such quick and instant drink recipes when I have to serve a crowd. The ingredient s required for making this drink is common in everyone's pantry shelf. So it is very easy to make this drink even we are in a hurry. No need for peeling fruits or making a mess in the kitchen. I got good reviews for this drink a couple of times. You can also prepare this drink using fresh milk or coconut milk instead of using milk powder. Moreover, you can change the color of this drink using pista essence or strawberry essence ( rose essence).

INGREDIENTS ( serves 2)

Milk powder - 4 tbsp ( you can use milk or thick coconut milk instead)
Sugar  - 4 tbsp
Water - 2 cups
Cardamom - 5 or 6 nos
Black kuskus or sabja seeds - 1 tsp 

PREPARATION

  • Soak the sabja seeds in some water for a minute or two. You can use black kuskus instead of sabja seeds.
  • Blend together water, milk powder, sugar, and cardamom.
  • Once done, pass this drink through a strainer. 
  • Add the soaked sabja seeds to the serving glasses and then pour the drink. 
  • Serve and enjoy.

VARIETY PUDDING / BALLOON PUDDING

Puddings , my favorite dessert recipe. I love experiments in pudding recipes than baking cakes and pastries. You can check previous videos for a variety of pudding recipes. I always need some variety in puddings or even in desserts or sweets. This time am with an exiting milk pudding recipe. I inspired this pudding recipe from a Japanese food video where the pudding is filled in a tiny balloon along with a pack of  caramel . Burst the balloon using a toohpick, drip the caramel which is provided along with the balloon pudding over this milk pudding and enjoy . Is it safe to set an edible pudding inside a balloon?..sorry to say...am not sure about that. But the tastes was awesome and is really a kind of entertainment for kids to bursting the balloon and having the dessert. You can also set this pudding inside egg shells which is thoroughly washed. Egg pudding without using egg. Right?.you can make Easter egg sweet or dessert  using this method or enjoy your Christmas which is almost around the corner with this yummy creamy Christmas pudding. Moreover this pudding will be a great hit for birthday parties especially for kids birthday.

INGREDIENTS

For the pudding mixture 
Milk - 1 cup
China grass - 3 gms 
Condensed milk - 2 tbsp or more 
Sugar - 2 tsp or more 
Caramel water - for topping this pudding 

PREPARATION

  • For making tbis balloon pudding, u need water balloon and a squeeze bottle.
  • Wash the water balloon thoroughly using this squeeze bottle. 
  • Let's prepare the milk pudding mixture.
  • Heat milk in a sauce pan. 
  • Meanwhile, melt the China grass in another pan along with quarter a cup of water. Cook until the chinagrass melts to clear liquid.
  • Once the milk starts boiling, add sugar and condensed milk. Mix very well. You can add more condensed milk as per your sweet preference.
  • Once the chinagrass melts to clear liquid, pour it to the milk mixture through a strainer. Mix until well combined. Cook for a minute. Remove from flame 
  • Transfer this mixture to another bowl and allow it to cool slightly. 
  • Once the milk mixture cool slightly, pour the milk mixture into the squeeze bottle.
  • And fill the water balloon with this milk mixture using  the squeeze bottle. 
  • Tie the balloon tightly . I made small balloon pudding only. Do not tie the balloons very tightly. 
  • You can also set this milk mixture in a silicon mold.
  • Keep it in the refrigerator for 4 hours.
  • Meanwhile you can prepare the caramel water by caramelizing the sugar and then add water to the caramel. 
  • So once the pudding is done, prick the balloon using a tooth pick. Remove the balloon and drizzle the caramel water over it. Serve and enjoy.
  • Yummy variety pudding is ready.

I have shared many snacks recipes on my blog. Satisfying our sweet tooth especially after lunch is not an easy task. Yeah..we all prefer quick and easy snack to make for our family especially to serve along with evening tea. Pazham vilayichath or banana coconut snack is as yummy as it sounds. This easy sweet snack is filled with the ingredients which are tasty and healthy. This plantain snack is perfect to savor along with the evening tea. Banana snacks like banana fritters(pazham pori), stuffed banana(pazham nirachath), toasted banana (pazham vazhattiyath), steamed banana are all-time favorite snacks recipes, especially in Malabar region. Evening snacks or festive snacks are very important and popular in the Malabar region. This sweet plantain snack(pazham vilayichathu) is filled the crunchiness of dry nuts, crispiness of rice flakes and melt in mouth roasted plantain. It is very easy to make this snack at home, as the ingredients are already available in our pantry. Moreover, you can impress your guest with this sweet simple snack and can see your guests gorging over till the last piece. So here is the recipe for easy snack recipe using plantain or pazham vilayichath (banana coconut sweet snack)

INGREDIENTS

Banana (ripe plantain)   - 1, big, chopped
Brown sugar or granulated sugar  - 4 tsp or as required
Scraped coconut - half a cup or more
Rice flakes - 3 tbsp
Cashews  - few or as required
Raisins  - few or as required
Cardamom - 2 nos
Ghee - 1 tsp + 1 tsp , softened

PREPARATION

  • Heat a pan with 1 tsp of ghee. Add the chopped plantain and sugar to it. Saute until the plantain turns slightly golden and done. When done, transfer it to a plate and set them aside. 
  • Now to the same pan, add 1 tsp of ghee. Add cardamom, cashews, and raisins. Saute them until golden and then add the rice flakes. Fry them until crisp. Finally, add the scraped coconut. Saute for a minute. You can add sugar if required. 
  • Add the prepared sauteed plantain and mix all together until well combined. 
  • Serve hot.

Plum cakes are prepared by soaking dry fruits and nuts in rum or wine. But I soaked the dry fruits in orange juice only. Some prefer soaking the dry fruits in hot black tea instead of orange juice. You can add your favorite dry fruits and nuts like dates, prunes, figs, walnuts, etc. I added cherries, dried cranberry, tutti-frutti, raisins black and yellow. Moreover, this plum cake is an Eggless cake recipe that too without using the oven. As Christmas is around the corner, many of my viewers requested an easy cake recipe. This simple plum cake using wheat flour is perfect for Christmas. For all those plum cake lovers, this is a must try moist cake recipe. Instead of All purpose flour, wheat flour is added which makes this cake a healthy cake for sure. Here is the recipe for an easy wheat plum cake without oven or eggless wheat plum cake recipe.

INGREDIENTS

For soaking 
Dry fruits - half a cup ( I took raisins, cranberry, dried cherries), chopped
Tutti frutti - 2 Tsp 
Orange juice - half a cup

For the cake 
Wheat flour - 1.5 cups
Brown sugar - 1 cup or less than one cup
Baking powder - 1.5 Tsp
Baking soda - half tsp
Caramel water - half a cup
Vegetable oil - half a cup
Buttermilk - half a cup
Vinegar - 1 tbsp
Vanilla essence - 1 tsp
Chopped cashews - few
Spice powders - quarter tsp each( I took the ginger powder, nutmeg powder and cinnamon powder)

PREPARATION

  • Soak the dry fruits and tutti-frutti in orange juice for 6 hours ( preferably overnight).
  • You can prepare the caramel water ahead. Caramelize 6 tbsp of sugar until golden. Add half a cup of water to it and mix until well combined. Set aside to cool. 
  • Grease the baking tray with veg oil and line with Butter paper. I took the 7-inch square baking tray.
  • In a large bowl mix caramel water, veg oil, buttermilk and vinegar very well.
  • To this add wheat flour, powdered brown sugar, baking powder, baking soda through a sieve. 
  • Combine the flour mixture with the wet ingredients in batches.
  • Sprinkle some flour(1 tsp) over the soaked fruits before adding to the cake batter.
  • Add vanilla essence, half of the chopped cashews and soaked dry fruits to the batter. Fold well.
  • Finally, add the spice powders and again fold. 
  • Pour the prepared batter into the baking pan and top it with remaining nuts. 
  • Preheat a nonstick pan on the stovetop. Place the tin inside this nonstick pan and bake for 30 to 40 minutes.
  • Once cooled, slice it and enjoy the healthy and tasty plum cake.

SIMPLE SNACKS RECIPES - BREAD BANANA SNACK

Bread snacks or banana snacks especially plantain recipes are always kids favourite. These kids recipes are very easy to make and at the same time it is scrumptious too. I love to experiment in snacks recipes. Whenever my kids asks fir any evening snacks, I just for some creative snacks recipes using bread and banana. Though Brown bread is my favirite, all my snacks recipes calls for white bread or milk bread only. Here am sharing a special inviting snack recipe , a sweet yummy snack using bread and banana. The recipe is very simple. Just make french toast or bread toast and set aside. Then cook the sliced banana or ripe plantain in caramel sauce until the banana is done. Then spread the french toast in a serving tray and then top it with caramel banana and its sauce. Serve immediately. Yummy. So hope you all liked this simple snack recipe with Bread and banana.

INGREDIENTS


For French toast
Bread  - 8 slices
Egg   - 1
Sugar - 2 tbsp
Milk   - quarter a cup
Oil or ghee

For Caramel banana 
Sugar    - half a cup
Water    - quarter a cup
Butter  - 2 tsp, at room temperature 
Milk   - half a cup 
Ripe plantain   - 1, sliced 

PREPARATION

Here is the recipe video 



  • Let's make french toast first. For that, as usual whisk egg, milk and sugar in a bowl. Instead of adding milk you can add more eggs.
  • Heat a pan with ghee or oil. Dip each bread slices in this egg mixture and toast it until both sides are done.
  • When done, transfer it to a plate and set aside.
  • Now make the caramel banana. For that, make the caramel syrup by heating sugar and water.
  • Once the sugar starts caramelizing, reduce the flame to medium low and add butter . You can add melted butter but it must not be too hot. Combine well and then add milk at room Temperature. Combine again. So the sauce is ready. To this add the sliced plantain and cook it until the plantain is done. 
  • Now lets arrange tbis in a serving plate. 
  • Arrange the french toast in the serving plate. Top it with caramel banana along with the sauce. Serve immediately. 
  • You can also refrigerate the french toast and caramel banana separately and then combine them only while serving. 
  • Do try this snack recipe with banana and bread.

NO OVEN EGGLESS CHOCOLATE CAKE PUDDING

Desserts, especially pudding recipes are the highlight of any special occasions. We all need something special like sweets or desserts to treat our guests. I love to make variety pudding recipes for my guests as pudding recipes are very less mess recipes for me. This eggless chocolate cake pudding is an outstanding pudding recipe with eggless chocolate cake as the base and topping with homemade chocolate sauce. The eggless chocolate cake is very easy to make cake recipe that too without oven. This no oven no egg cake recipe is really superb moist and the chocolate sauce which I used for topping this cake pudding absolutely creamy and yummy.

INGREDIENTS

For Chocolate cake (1 cup = 250 ml)
All purpose flour/ maida - 3/4 cup
Cocoa powder - 3 tbsp
Coffee powder - half tsp
Baking powder -half tsp
Baking soda - quarter tsp
Salt - quarter tsp
Oil - quarter a cup
Powdered sugar - half a cup
Lemon juice -half tsp
Curd - 2 tbsp
Water - half a cup

For Chocolate Sauce

All purpose flour/ maida - half tsp
Coffee powder - half tsp
Cornflour - half tsp
Cocoa powder- 2 tbsp
Water - 2 tbsp
Milk - half a cup
Sugar - quarter a cup or more

PREPARATION

Here is the video



  • Set aside the cake tin or steel bowl ready. Here I took two steel bowls. Grease the bowls with oil and dust it with flour and tap out the excess flour.
  • Now let's prepare the cake batter. For that, take a large bowl and mix together oil and powdered sugar. Mix well.
  • To this add curd and lemon juice. Again mix well.
  • Now keep a siever over the bowl and add flour, cocoa powder, baking powder, baking soda, salt, coffee powder. 
  • Sieve well and combine it with the wet ingredients. Fold very well.
  • Then add water little by little and mix very well. So the batter is ready.
  • Now pour the batter to the prepared bowls. Tap the bowls. Cover it with aluminium foil.
  • Here we are going to steam it in a non-stick pan instead of using oven or a steamer. So heat a non stick pan  with some water. Keep a lid and once the water boils, keep the steel bowls with batter over it. 
  • Steam cook it for 30 to 35 minutes with lid closed. Once the tooth pick inserted comes out clean, then the cake will be ready. 
  • Meanwhile make the chocolate sauce.
  • Add all those ingredients given under for making sauce in a pan except butter. Mix very well without any lumps. Few lumps are ok.
  • Then heat it over a very low flame until it thickens slightly. You must stir this mixture Continuosly. Once it thicken slightly, add butter and combine well. Remove from flame. Pass it through a strainer and transfer it to a bowl. Set this aside.
  • After 30 minutes or when the cake is cooked, take out the cake tin and pass a knife along it's side. You can wait for the cake to cool down. But I didnt. Invert it into a plate.
  • Cover the cake with this prepared chocolate sauce . 
  • Decorate with a teaspoon of condensed milk and can serve hot or cool.
