FRUIT SALAD RECIPE

We can enjoy all the goodness of different fruits through a simple fruit salad. Fruit salad is the simplest dessert that is more delightful in each scoop. More over this is the best way to feed your picky eaters or kids who dislike fruits. This time am here with a  fruit custard recipe which is simple, tasty and relatively healthy dessert which never fails. Always try to choose different colorful fruits which will make this dessert more vibrant and attractive. Here is a twist , I added a layer of strawberry sauce mixed with prepared custard which gives a special yummy taste and attractive look to this whole dessert. 
Every mom loves googling for making their sweet tooth kids happy. They love searching for kids desserts recipes. Am not a sweet tooth person but my small kid, my toddler she loves sweets...only sweets...Sometimes I just combine hot steamed rice with sugar and mashed banana to feed her lunch. This is an easy dessert to make for kids. INGREDIENTS (servings - 3 small cups)

Apple                 - 1(green apple or red apple or can add both)
Strawberry         - 5 nos + 2 nos for the sauce
Mango                - 1, small
Kiwi                    - 3 nos
Pine apple           - 1 cup, chopped
(Chop the fruits to bite size pieces or chop finely...you can add ripe plantain, avocado too along with this chopped fruits)
Cashews, almonds, pistachios, walnuts        - 1 cup (chopped, can use your favorite nuts too)
Ice cream                             - for topping, i used strawberry flavor
Sweetened condensed milk   - 6 tbsp
Milk                                      - 2 cups
Custard powder                   - 3 tsp
Sugar                                   - 4 tbsp ( can add more or less)

PREPARATION

  • Bring to boil the milk and add sugar in a large bottomed vessel. Mean while mix the custard powder with 4 tbsp milk and make a paste in a separate bowl. 
  • Add it to the boiling milk and stir it continuously without any lumps. Do not stop stirring after adding the custard mixture. 
  • When it starts to thicken, remove from flame.
  • Set aside to cool. Once cooled, grind it for the best result. Grinding it to paste is optional only.
  • Chill for 2 hours for best result.

  • In a pan cook chopped strawberries (2 nos), sugar(1 tsp if required) and 5 tbsp water in a vessel until you get a thick syrup.
  • Take a quarter cup of prepared custard and combine it with this strawberry syrup/sauce. You can blend them in a blender along with few tsp of milk, if it is thicker. Set aside.

  • You can prepare the custard ahead of time and chill for quick fruit salad. 
  • Serving of this dessert depends on your taste and the bowl used for serving.
  • Mix together the finely chopped fruits with the sweetened condensed milk (milkmaid).
  • Now take the bowls/cups to serve the fruit salad.
  • Add the chopped fruits combined with milkmaid (2 TBSP)as the bottom layer.
  •  Layer some chopped NUTS  over it. Then layer some YELLOW CUSTARD or plain custard over it. 
  • Again layer the CHOPPED FRUITS, then NUTS, then PINK CUSTARD and repeat the process and finally top it with a scoop of ice cream and some nuts.
