Eggless Gulab Jamun Recipe| How to make Delicious Gulab Jamun

Just spell the word STRESSED backwards....The answer is surprising right? DESSERTS !!! Yes, do have some melt in your  mouth desserts when you feel stressed. I kid you not. You will see the magic. Any way its my personal theory only.  Melt in mouth gulab jamun is my favorite yummy desserts which i often make at home. A super cute and lovely dessert which suits any occasions. If you have milk powder at home, u can easily make this soft delicious sweet gulab jamun.  It is prefered to buy bulk milk powder for such recipes as the use of milk powder for cooking increased these days. But here i used Nido milk powder only. Or you can use any of your favorite milk powder brands / powdered milk brands.

Every country has something sweet to offer and as an Indian, i prefer Gulab jamun as my first choice among those list of my favorite Indian sweets. Shall we go for a sweet ride??...List of my favorite sweet recipes for every occasions are Motichoor Ladoo, Kaju katli (cashew burfi recipe), Rasgulla recipe, Jalebi, Halwa, kheer and much more. Gulab jamun / Gulaab jamun is a milk solids based sweet mithai which is very popular in India, Pakistan, Sri Lanka, Bangladesh etc..Traditionally it is made from freshly curdled milk. This dessert is very much similar to the Arab dessert Luqmat- al- qadi, although it uses a completely different batter. This is often served at festivals like Eid, Diwali, Christmas dessert ideas and  party dessert ideas for birthdays, Marriages etc. Gulab jamun get its brownish red color because of the sugar content in milk (khoya). In some other variants of gulab jamun, sugar is added in the batter and when fried it will become black in color because of the sugar caramelisation  which is then called as kala jamun or black jamun.

INGREDIENTS (1 cup - 250 ml) can make 15 jamuns

Milk powder    - 1 cup (can use any,i used nido milk powder)
All purpose flour / maida   - 3.5 tbsp
Baking soda                - quarter tsp only ( you must add 1 tsp baking powder when it is used instead of baking soda)
Curd  / yogurt   - 2 tbsp (can add required milk instead)
Ghee                 - 1 tbsp
Salt a pinch
Oil / ghee for frying

FOR SUGAR SYRUP

Sugar                       - 1.5 cups
Water                       - 2 cups
Cardamom powder - half tsp or add 2 split cardamom
Lemon juice           - 1 tsp

PREPARATION























  • Sieve together all the dry ingredients (milk powder, baking soda, flour and salt) to a large bowl.
  • Combine curd and ghee well and add it to the sifted flour.
  •  Knead it well to a soft sticky dough. You must knead it very very well which makes the perfect jamun. Do not be panic if it is sticky and do not add more curd or milk for kneading (if milk is adding instead of curd , u have to add more quarter cup of milk). Just press the dough with your greased palm and knead several times. When done, set aside, covered. Let it stay for 5 - 10 minutes while you make the syrup.
  • MAKING OF SUGAR SYRUP - Take sugar and water in a sauce pan and bring it to boil. Let it boil for 8 minutes in a low flame. Here no need of reaching 1 string consistency, but must be little sticky. Now add lemon juice and cardamom powder. Mix well. The syrup must be hot while you dip the fried  balls.
  • Heat oil / ghee (for deep frying) in a non stick pan (i prefer) or can use any . Once hot,make the flame very low. You must fry the jamun in a low flame so that the inner will be cooked well and gives fine texture to the jamuns. 
  • Now take a small portion of the dough and make smooth balls without any cracks ( You can wet your hands while rolling with a drop of water for making soft balls if required). Drop the soft ball to the oil one by one( i prefer dropping the balls immediately after shaping into smooth balls ). The balls must sink in the oil first and later slowly float. 
  • Now deep fry the balls over a low flame, stirring gently with a spoon occasionally. Fry until golden. Drain to a paper towel and immediately dip it in hot sugar syrup. (you can reheat the syrup if it is less hot).
  • Let them soak for minimum 2 hours. Once cooled, keep refrigerated for few hours for the best result.
NOTE - If you are using milk instead of curd in this gulab jamun recipe, then you have to use more the amount of curd to make a smooth sticky dough.

INGREDIENTS

for marinating cauliflower

Cauliflower / gobi              - 1 cup, thinly sliced florets
Garlic paste                        - 1 tsp
Tomato sauce                      - half a tsp         
Chili powder                       - half tsp, optional, i did't used
Soy sauce                            - 1 tbsp, light soy sauce(if dark soy sauce, add only 1 tsp or less than that)
Salt

FOR COATING
Pepper powder                    - half tsp
Egg                                      - 1
Cornflour                            - half a cup
Cornflakes                          - 1 cup or more, crush it with hand.
Salt
Oil for deep frying

PREPARATION















  • Clean the cauliflower well and thinly slice the florets into bite sized pieces and then marinate it with garlic paste, tomato sauce, soy sauce, chili powder (optional) and salt.
  • Keep refrigerated for 15 minutes..
  • In a bowl , add cornflour . Keep it aside.
  • Beat an egg with pepper powder. Add salt and Keep it aside in a separate  bowl.
  • In another bowl , add crushed corn flakes for final coating. Keep it aside.
  • Now take the marinated sliced gobi or cauliflower florets out and first dip each thin pieces in cornflour mixture , then in egg batter and finally roll in crushed cornflakes. Gently shape it like a small ball with your hands. Do it one by one and place it in a plate. Only this process is time consuming. (NEVER mix the all marinated cauliflower with cornflour and coat all together. ALWAYS Coat one by one.).
  • Heat oil in a deep bottomed vessel / nonstick deep bottomed pan and fry it in hot oil. ( the flame must be in  medium low else the crust will become dark leaving the inner uncooked.)
  • When it turns golden ,remove it to a serving plate.
  • Crispy GOBI popcorn Ready!!!!

BHINDI FRY RECIPE - KURKURE RECIPE / CRISPY LADYS FINGER

Lets try a delicious and lovely looking crispy ladys finger recipe with step by step pics. Some crispy crunchy veggies along with steamed rice and hot south Indian sambar is quite enough for a scrumptious lunch meal. This kurkure recipe for bhindi / crispy okra recipe is an easiest Indian recipe that be used as a snack or as a side dish or a starter.  Actually this fried okra recipe is a snack like recipe which tastes great with rice and dal, rice and sambar, or even with paratha. Some love to have crispy okra / ladys finger recipe  but some want it to be soft and mushy. Any way this is my favorite okra recipe even though it is deep fried. INGREDIENTS

Ladys finger / okra / bhindi      -  300 g
Chili powder                             - half tsp or to taste
Turmeric powder                      - quarter tsp
Coriander powder                    - 1 flat tsp
Vinegar                                     - half tsp
Rice powder                              - 2 flat tsp
All purpose flour o gram flour - 2 tbsp
Oil                                             - 1 tsp + oil for frying
Salt


PREPARATION







  • You can either cut bhindi / lady finger into length wise or make small round slices. Keep it in a bowl.
  •  To this, add chili powder, coriander powder, turmeric powder, vinegar, rice powder, all purpose flour(maida) / gram flour and salt.
  • Then add oil and little water to make a fine texture. It will be slightly  sticky. 
  • Combine it well with hand gently.
  • Heat oil in a non stick pan and make flame to medium once hot.
  • Drop the marinated okra / ladys finger into this hot oil and deep fry in batches for 5 minutes over a medium heat.
  • If it become crispy and golden, transfer it to a paper towel to absorb the excess oil.
  • Serve along with steamed rice and sambar / Dal. Its yummy.

GREEN CHICKEN - NO ONION NO GARLIC RECIPES / OIL LESS CHICKEN THIGH RECIPES

Hi foodies..Here is a tasty and delightful chicken dish with  no onion, no garlic, no tomato, no spice powders, no sauteing. Just one teaspoon of oil is required for the entire green chicken roast . An excellent chicken recipe for diet people,  but once you try this recipe am sure you will never stop making this yummy healthy chicken roast. 
Green curry recipe using chicken /chicken thighs is a very popular delicious dish with full of flavors. Here am sharing a very healthy stove top recipes with chicken thighs with no onion, no garlic, no tomato and even no spice powder. Still it tastes heavenly delicious with an aromatic appetizing flavor. Here i used only 1 tbsp of oil for this yummy preparation. A teaspoon of butter can be added for those who loves a  buttery flavor or instead few drops of coconut oil is preferred.  Do try this chicken thigh recipes healthy / chicken thigh healthy recipes at home. INGREDIENTS

Chicken thighs                                    - 3 nos (600 g)
Oil                                                       - 1 tbsp(optional for diet ppl)
Butter                                                  - 1 tsp (optional)
Salt

for grinding

Coriander leaves                                 - half a cup, chopped
Curry leaves                                       - few
Palak leaves                                        - quarter a cup, chopped
Green chilies                         - 2 nos (for more hot, u can add more)
Vinegar / lemon juice            - 2 tsp
Yogurt / curd                         - 3 tbsp
Fennel seeds                         - 1 tbsp

PREPARATION














  • Grind together all the ingredients given under ''for grinding" to a fine paste. Do not add water while grinding.
  • Wash and make slits all over the skinless chicken thighs and pat dry them well. Marinate the chicken thighs with this green masala paste along with required salt. 
  • Heat a non  stick vessel or a pan and reduce the flame to low once hot. Add the well marinated chicken thighs to it along with half a cup of water. (no need of adding more water as chicken itself will release water once hot). 
  • Cook  over a medium flame with lid closed  and add 1 tbsp of oil after 5 minutes. 
  • Again cook over a medium low flame , covered  until chicken is well coated with the masala and flip the chicken occasionally. 
  • Once chicken is well cooked, add butter(optional) and toss the chicken well. This will gives a buttery flavor. If not can add some coconut oil instead for a yummy flavor.
  • Serve hot along with paratha, chapati, ghee rice..

ALOO PARATHA RECIPE / ALOO CHAPATI RECIPE - STUFFED PARATHA / CHAPATI


Aloo Paratha / Aloo Chapati is a paratha stuffed with spicy potato mixture. This potato mixture can be made according to our taste and preference. Some prefer sauteed potato masala for stuffing and some prefer simple spiced potato stuffing. For kids, you can add some boiled and mashed veggies along with this mashed potato  for a easy healthy breakfast recipes or  healthy snack box recipe.Here am with a simple stuffing without sauteing. Some healthy breakfast ideas /foods similar to this aloo paratha are Chana paratha, rajma paratha, veg paratha, gobi paratha, palak paratha, methi paratha and like so. Such easy nutritious food for breakfast is liked by both kids and adults equally.  Hope you all like this stuffed paratha or stuffed chapathi recipe. You can use any pickle or chutney for this chapathi side dish. 
And now about the dough (chapathi dough)... While kneading the chapati flour / chappati flour add few teaspoon of oil to make the chapathi soft. INGREDIENTS

for the whole wheat dough

Wheat flour   / Atta                          - 2 cups
Oil                                                    - 2 tbsp
Hot water                                         - as required for kneading
Salt                                         


For the stuffing

Potato                                       - 2 big potatoes, boiled and mashed
Kashmir chilli powder              - half tsp
Turmeric powder                      - quarter tsp
Garam masala powder             - quarter tsp
Amchur / dried mango powder - 1 tsp (optional, for the tanginess)
Green chilies                            - 1, chopped
Coriander leaves chopped       - chopped, 3 tsp
Salt
Ghee for topping the paratha.


PREPARATION












Making of paratha / chapathi


  • In a wide bottomed vessel, add wheat flour, salt and oil. To this, add hot water drop by drop and mix it with a spoon or ladle(as it is hot). Do not add more water. Bring the mixture together and slowly knead the dough very well until soft. Set aside until you prepare the stuffing.

Making of potato stuffing /aloo masala

  • Cut the potato into four pieces and pressure cook the potatoes for 2 whistles(do not peel the skin). When done, peel the skin and mash it very well without any lumps. 
  • When done, add all other ingredients (except ghee) given under stuffing . Mix well. Set aside.

MAKING OF ALOO PARATHA / ALOO CHAPATI

  • Make small balls with the chappathi dough. Dust the balls and flatten each balls with a rolling pin and make small round disc length chapati. Set aside.
  • Make balls with the potato masala / aloo masala. Set aside.
  • Now take a small round disc length chapati, place a potato ball  in the center. Now take the edge of the small disc length chapati, make pleats and bring it to the center. 
  • Now press the center of the pleats.
  •  Now sprinkle some flour and roll it slowly to make a ball  with your hands.
  • Flatten it with the rolling pin slowly and cook the paratha over a medium heat on a hot tawa. 
  • When one side is cooked, spread some ghee and flip the other side. When done, stack them up in a covered casserole for the soft paratha.
  • Serve hot along with pickle or chutney.
