KFC STYLE CHIZZA RECIPE

To all pizza lovers, here is a stunning pizza recipe that gives your taste buds an ultimate jolt. Chizza as the name implies, it is a chicken and pizza combo. Cool, right? I wondered and amazed when i hear this name for the first time at KFC. Wanna taste this freaky pizza as soon as possible.  Yup, the breaded and fried chicken breast or chicken fillet is topped with pizza sauce and other pizza toppings. It sounds simple and yet interesting to me. So I thought of reproducing this KFC style chizza recipe at my home. Anyways, this luscious meal made me proud when I try the same at home. It was really fun while layering pizza toppings over chicken crust. Though chicken breast is good for making chizza crust, I made this chizza using chicken thighs. For sure, you can also substitute chicken thighs while making chizza. Debone the chicken thighs gently and carefully and then soak them in buttermilk mixture for making the meat soft and moist. Ok, let us see how to make KFC style chizza at home.

INGREDIENTS

Chicken thighs - 5 nos ( chicken breast is preferred)
Egg                   - 2 nos
Cornflakes        - 1 cup
Oil

Marinade
Butter milk                   - 1 cup 
Chili powder/paprika- half tsp
Garlic powder             - 1 tsp
Salt                              - to taste

Flour mixture
Plain flour/maida - half a cup
Chilli powder         - 1 tsp 
Garlic powder       - 1 tsp
Salt                        - to taste

For the topping
Shredded mozzarella cheese - half a cup or more
Pizza sauce   - as required to spread
Bell pepper   - quarter a cup, chopped
Olives           - as required, sliced

PREPARATION


  • Debone the chicken thighs gently to flatten them and wash well. Drain the excess water using a paper towel. Set aside.(if you are using chicken breast, then butterfly it to flatten )
  • Place it one by one on a cutting board and cover it with a cling film. Beat it well using a rolling pin or hammer. (beat on the outer part of the meat, which is very important )
  • When done, set aside.
  • Now make a marinade using butter milk, garlic powder, chili powder, and salt. Soak the chicken fillets in this marinade. Refrigerate for 30 minutes. This makes the meat soft and juicy.
LET US START MAKING THE CHICKEN CRUST
  • In a bowl, add plain flour, chili powder, garlic powder, and salt. Mix well. Set aside.
  • Whisk the eggs with a pinch of salt and set aside.
  • Crush the cornflakes with hands and set aside.
  • Now take out the marinated chicken, cover each chicken fillet with flour mixture, then dip in egg batter, roll in crushed cornflakes and set aside on a plate. Let it set aside for at least 10 minutes (preferably 30 minutes).
  • Heat a pan for deep frying. Once the pan is hot, make the flame to medium and fry the breaded chicken one by one. Flip only when one side is done. Fry until the chicken turns golden. (Do not fry over a high flame or do not fry more).
  • When done, transfer it to a paper towel and drain the excess oil.
MAKING OF CHIZZA
  • Transfer the fried chicken crust to a baking tray. Spread Pizza sauce over this chicken crust, put mozzarella, bell peppers, again mozzarella and finally sliced olives.
  • Bake in a preheated oven, until cheese melts (for 5 minutes).
  • Cut into pieces and serve hot.

MUTTON FRY RECIPE

Mutton fry is a tasty finger licking good mutton recipe. The pressure cooked tender mutton pieces are roasted or fried in coconut oil along with spice powders until the gravy is well coated on mutton completely. This dry fry mutton recipe is delicious to side along with rice or dosa . Though you can make  mutton fry recipes in different style or in many variations, i recommend this recipe for you as it is my favorite mutton recipe for weekend lunch meal. I love this mutton fry to pair with steamed rice and spicy curd curry along with a lemon pickle . Wow! It's a drooling combination. Some prefer pepper powder while some prefer chili powder in mutton recipes. So add these spice powders as per your preference to heat. I added a small portion of both pepper powder and chili powder as am a mildly spice lover. So hope you all give this tasty mutton recipe a try.

INGREDIENTS


Mutton              - 450 g
Onion                - 1, big, thinly sliced
Green chilies     - 1 or 2
Ginger garlic paste - 1 tbsp
Coriander powder        - 1 tsp
Garam masala powder - half  tsp
Coconut oil
Salt

To fry
Shallots                - 3 nos, chopped
Turmeric powder - half tsp
Chili powder        - 1 tsp
Coriander powder- 1 tbsp
Tomato                 - 1, small, sliced
Pepper powder     - half tsp or more


PREPARATION















  • Heat a pressure cooker with some oil. Saute onion until light. Then add green chilies and ginger garlic paste. Saute for a while.
  • When done, add cleaned mutton pieces along with garam masala powder and coriander powder. Add salt. Combine well.
  • Pressure cook for 3 whistles without adding water (depends on tenderness of meat ). Set aside.
  • Now heat a non stick pan with 2 tsp of coconut oil. Fry the chopped shallots until golden. 
  • To this, add the cooked mutton along with its water. Fry for few minutes.
  • When it becomes dry, add turmeric powder, chili powder, coriander powder. Mix well. (it will become completely dry).
  • To this, add half a cup of water and sliced tomato.
  • Stir well for few minutes. Let it cook well again until it becomes dry.
  • Stir occasionally. Check for salt.
  • When the mutton is done, add pepper powder and mix well. 
  • Fry until all the gravy is well coated on the mutton. 
  • Serve hot. Yummy.

Green peas are a good source of dietary fiber and are the powerhouses of nutrition. Consumption of this superfood is very healthy. Peas contain a high amount of coumestrol which helps in the prevention of stomach cancer. More than that peas have high levels of antioxidants which help in anti aging, high energy, and strong immune system. Today am here with an easy and quick Indian style peas curry recipe. Green peas cooked in coconut milk and spices gives a special flavor. You can also use coconut milk instead.

INGREDIENTS

Green peas             - 1 cup, soak in water
Onion                     - 2, small, sliced
Mustard seeds        - half a tsp
Tomato                   - 1, chopped
Garlic                     - 4 cloves
Ginger                    - a small piece
Fennel seeds           - 1 tsp
Chili powder           - 1 tsp
Turmeric powder     - half tsp 
Coriander powder    - 1 tbsp
Asafoetida / hing      - quarter tsp, optional
Milk                          - half a cup
Salt                            - to taste                          
Curry leaves       - few, i skip this as i do not have any

  • In a pressure cooker, add oil. Splutter mustard seeds, curry leaves and then add sliced onion. Saute until it turns to light.
  • Grind together tomato, garlic, ginger and fennel seeds to a smooth paste.
  • Add this tomato mixture to this sauteed onion. Combine well and cook for few minutes.
  • To this add chili powder, turmeric powder, coriander powder, and hing. Mix well.
  • Then add the soaked green peas (soak green peas in water for at least 4 hours or overnight). Combine well and add required salt also.
  • Add half a cup of water and pressure cook it for 3 whistles. Once done and when pressure releases, add half a cup of milk and again boil it for a couple of minutes. Now the gravy becomes thick in consistency. 
  • Check for salt and remove from flame. 
  • You can add hot water if you need thin consistency.
  • Serve hot along with dosa, chapati etc.

HOME MADE PIZZA SAUCE

Making of pizza sauce at home is quite simple. So, no more use of store bought pizza sauce. This sweet slightly spicy sauce is great on pizza and pasta. No matter,  you can also use this sauce as a dipping sauce. Here am going to share the recipe of pizza sauce using fresh tomatoes. While blogging, I found many fine recipes for pizza sauce that calls for canned tomatoes. But I prefer using fresh tomatoes to make my pizza sauce. This is the first time am making pizza sauce at home. Pizza, my daughters favorite. She asks for pizza whenever we are out. I used to make bread pizza, vegetable pizza, chicken pizza especially for her on weekends or more often for snacking. Kids love pizza and pasta for a day in or day out. So why can't we make our kids favorite food at home? Try making this easy and delectable pizza sauce at home for the base for various pizza recipes like chicken pizza, vegetable pizza, paneer pizza, bread pizza like so. INGREDIENTS

Ripe red tomatoes - 5 nos
Onion                    - 3 tbsp, very finely chopped
Garlic                    - 1 tbsp, finely chopped
Salt                        - to taste
Sugar                     - 1 Tsp or less
Red chili flakes     - half tsp
Kashmiri chili powder/ paprika - half tsp
Oregano                 - 1 tsp
Dried basil             - 1 tbsp
Tomato sauce         - 1 tbsp
Butter                     - 1 tsp
Oil                          - 2 tsp

PREPARATION

  • Boil some water in a vessel.
  • Add tomatoes ( make an X slit at the bottom) to the boiling water. Close the vessel and let it boil for 5 minutes.
  • When the skin starts to leave from tomatoes, transfer it from water to a plate.
  • Once slightly cooled, peel the skin.
  • Add 3 tomatoes into a blender and blend until a smooth puree. Set aside.
  • And chop the other two tomatoes discarding its seed. Set aside.
  • Heat oil in a non-stick wok. Add chopped garlic, saute well over a low flame (do not burn it).
  • When done, add chopped onion and saute until slightly golden.
  • Then add chopped deseeded tomatoes and cook until mushy.
  • To this, add prepared tomato puree (3 cooked tomatoes) and mix well.
  • Now add salt, oregano, chili flakes, kashmiri chili powder, sugar, dried basil and mix very well.
  • Let it boil well and then add tomato sauce, butter (at room temperature).
  • Allow it to simmer for 5 to 8 minutes.
  • Remove from flame. Yummy flavorful pizza sauce is ready to use.

BEEF RECIPES - BEEF MASALA ROAST

Here am sharing a traditional beef roast recipe with you guys. Though this recipe calls for simple ingredients,  the method of preparation is different. Dry roasted ingredients add a special aroma to this roasted beef. Each piece of beef will be well coated with the gravy once the roast is done. Yes, a spicy beef recipe to side with chapati, paratha etc. Parotta with beef fry or beef roast is one of the popular Kerala recipes which is easily available in Kerala street food stalls. Moreover, the combination of parotta and beef is a heavenly delicious combo and is one of my favorite too. The beef cubes are well marinated with the ground paste of roasted ingredients along with fenugreek seeds and tomato slices. Later it is cooked until the beef is 90 % done. Cooked beef is then added to sauteed onion gravy and then roasted until the gravy becomes thick and each piece of beef is well coated with the gravy. INGREDIENTS

Beef                    - 1 kg, make small pieces
Tomato               - 1, big, sliced
Fenugreek seeds/ uluva - 1 tsp
Pepper powder   - 1 tsp
Onion                  - 2 nos, sliced
Green chilies       - 2 nos, slit
Curry leaves           - few
Salt 
Oil (coconut oil more preferred)


To roast

Coriander seeds         - 3 tbsp
Peppercorns               -3 tsp
Cumin seeds               - 1 tsp
Fennel seeds               - 1 tsp
Coconut scraped         - half a cup
Cardamom, cloves, cinnamon - 2 pieces each
Shallots                       - 15 nos
Garlic                          - 8 cloves, chopped
Ginger                         - a small piece, chopped
Dried red chilies          - 5 nos, add as per your heat tolerance


PREPARATION

















  • In a pan, dry roast coriander seeds, peppercorns, cumin seeds, fennel seeds, scraped coconut, cinnamon stick, cardamom, cloves for 5 minutes or until a fine aroma comes out over a medium low flame.
  • Transfer it to a bowl and set aside to cool.
  • In the same pan, add 1 tbsp of coconut oil and roast shallots, dried red chilies, ginger chopped and garlic chopped for few minutes.
  • Add these ingredients to a grinder along with the dry roasted ingredients. Grind it to a fine paste with little water. Set aside.
  • Now marinate the beef cubes with this ground mixture along with tomato slices, fenugreek seeds and salt for 30 minutes.
  • Then pressure cooks it for 3 whistles (depends upon the tenderness of meat) without adding water.
  • Meanwhile, saute onion sliced until soft and golden. To this add green chilies and saute well.
  • Then add the cooked beef along with the gravy. Let it cook until the gravy becomes very thick. Stir occasionally.
  • Finally, add a tablespoon of pepper powder and combine well. Check for salt. Serve hot.
