ROASTED VEGETABLES RECIPE - ROASTED OKRA

So i am back again with a vegetable stir fry recipe. Here am going to share our favorite veggie stir fry vendakka roast / okra roast / lady's finger roast. This veggie is popularly known as bhindi also. Though okra or bhindi is easy to cook and is delightful to our taste buds, most of us dislikes to experiment with this veggie. Any way this vegetable has got many health benefits too. The consumption of okra / vendakka helps to tackle diabetics. Here is a surprise face mask for you with okra. Boil okra, mash it and apply on your face. Once dry, wash it off for a fresh soft skin. Likewise it is good for hair also. Okay okay... lets move on to the recipe. Here is a kerala style roasted okra/ roasted vendakka recipe which is simply superb in taste. A simple, easy to cook stir fried okra cooked in a gravy of tomato, onion,garlic and few spices which is stir fried or roasted to perfection. In kerala this vendakka mezhukkupuratti is very common during onam sadya. You can roast this vendakka/ okra with more oil also but here i preferred less oil only. As okra is slime in nature, you have to saute them very gently. Or you to saute them before adding it to the roast. INGREDIENTS

Lady's finger / okra / vendakka - 250 g
Onion chopped                          - 3 tsp, chopped finely
Tomato chopped                        - 3 tsp, chopped finely
Garlic                                         - 1 tbsp
Turmeric powder                       - quarter tsp
Kashmir chili powder                - 1 tsp (can add more)
Coconut oil                                - 2 tbsp + 1 tbsp
Salt                                             - to taste, add less always
Curry leaves

PREPARATION







  • Cut the lady's finger / okra / vendakka round slices and set aside.
  • Heat a non stick pan with 2 tbsp of coconut oil. Saute chopped onion, chopped garlic and chopped tomato for a couple of minutes. 
  • To this, add turmeric powder and chili powder along with some salt (add less salt always for veggies). Saute well until tomato turn mushy.
  • Then add the roundly sliced okra / vendakka to it. Combine well and allow it to cook.
  • Once the okra changes its texture and goes dry, add 1 tbsp of coconut oil and curry leaves. Stir fry gently for a minute.
  • Switch of the flame. Vendakka roast is ready to serve.
  • Serve along with steamed rice and curry.
