HEALTHY CRISPY FRIED FISH - SARDINES PEPPER FRY

Hi friends. Today am with a healthy fish fry recipe. We love crispy fried fish or deep fried fish to the core. Isn't it? Especially sardine recipes. This version of fish fry calls for a healthy recipe. A kerala style pepper sardines fry / kurumulaku mathi fry with very less oil.  Yes, this recipe for fried fish is prepared with less oil yet very tasty. I have shared many different varieties of fried fish recipes in my blog. This recipe for healthy fish fry is very simple and must try recipe for those who are in diet. Fish lovers always struggle to follow a healthy diet as they feel nostalgic like me for fried fish recipes. I used to buy huge packs of fresh baby sardines or fresh small sardines and make pepper sardines fry or deep fried sardines to satisfy me and my family. Here is my tip showing how to fry sardines or fish healthy using very less oil. The awesome peppery aroma while frying fish is really mouth watering and irresistible. Fish egg fry recipe - sardines fish egg fry

INGREDIENTS

Sardines                      - 200 g, small
Kashmir chili powder - 1.5 tsp
Turmeric powder        - half tsp (but i used to add more )
Coriander powder       - 1 tsp
Pepper powder            - half to 1 tsp
Lemon juice                - of one lemon
Coconut oil                 - 2 tsp
Salt
Curry leaves

PREPARATION








  • Clean the sardines well. Drain it.
  • Combine together kashmir chili powder, turmeric powder, coriander powder, pepper powder, lemon juice, salt in a bowl and mix very well with a dash of water. Make a thick marinade (Do not make the marinade so watery). 
  • Marinate the cleaned drained sardines with this marinade and line them on a non stick pan or wok along with the remaining marinade.
  • Add half a cup of water  to this and turn on the flame.
  • Cook them covered over a medium flame until all the water gets dried off. See the pics. (No need of flipping and do not cook for more ).
  • Once done, either u can sprinkle some coconut oil and curry leaves, give  a fine stir and serve. OR like as i do, heat a non stick pan. Once hot, add 2 tsp of coconut oil (more preferred). Drop this cooked sardines one by one gently to this hot oil, then add curry leaves and fry it over a high flame for a couple of minutes. Flip only when one side is done. 
  • Serve along with hot steamed rice and sambar. Yummy and healthy.
