I have shared many snacks recipes on my blog. Satisfying our sweet tooth especially after lunch is not an easy task. Yeah..we all prefer quick and easy snack to make for our family especially to serve along with evening tea. Pazham vilayichath or banana coconut snack is as yummy as it sounds. This easy sweet snack is filled with the ingredients which are tasty and healthy. This plantain snack is perfect to savor along with the evening tea. Banana snacks like banana fritters(pazham pori), stuffed banana(pazham nirachath), toasted banana (pazham vazhattiyath), steamed banana are all-time favorite snacks recipes, especially in Malabar region. Evening snacks or festive snacks are very important and popular in the Malabar region. This sweet plantain snack(pazham vilayichathu) is filled the crunchiness of dry nuts, crispiness of rice flakes and melt in mouth roasted plantain. It is very easy to make this snack at home, as the ingredients are already available in our pantry. Moreover, you can impress your guest with this sweet simple snack and can see your guests gorging over till the last piece. So here is the recipe for easy snack recipe using plantain or pazham vilayichath (banana coconut sweet snack)

INGREDIENTS

Banana (ripe plantain)   - 1, big, chopped
Brown sugar or granulated sugar  - 4 tsp or as required
Scraped coconut - half a cup or more
Rice flakes - 3 tbsp
Cashews  - few or as required
Raisins  - few or as required
Cardamom - 2 nos
Ghee - 1 tsp + 1 tsp , softened

PREPARATION

  • Heat a pan with 1 tsp of ghee. Add the chopped plantain and sugar to it. Saute until the plantain turns slightly golden and done. When done, transfer it to a plate and set them aside. 
  • Now to the same pan, add 1 tsp of ghee. Add cardamom, cashews, and raisins. Saute them until golden and then add the rice flakes. Fry them until crisp. Finally, add the scraped coconut. Saute for a minute. You can add sugar if required. 
  • Add the prepared sauteed plantain and mix all together until well combined. 
  • Serve hot.
