INGREDIENTS

Sardines Fish egg/roe  (paninjeen)  - half a cup
Tomato                                               - half of a tomato, sliced
Garlic                                                 - 2 cloves
Kashmir chili powder                        - 1 tbsp (can add less)
Coriander powder                              - half tbsp
Turmeric powder                                - quarter tsp (for marination)
Salt
Coconut oil 
Curry leaves

  • Clean the sardine fish roe well and drain the excess water. Marinate this with turmeric powder and a dash of salt. Set aside.
  • Grind together tomato slices, garlic cloves, chili powder, coriander powder to a fine paste.
  • Heat coconut oil (preferably) and once hot, add this fine ground paste along with some curry leaves. Saute well until it thickens.
  • When done, add the marinated fish roe/fish egg and combine well. Check for salt and saute well until the fish egg is well roasted in the masala.
  • Cook for few minutes (over a medium flame only) or until the fish roe/ fish egg is well cooked and browned. The roe should get dry and brown in color.
  • This goes well with steamed rice and curry, chapati, dosa and can even make sandwiches.
